Summer Greens with Warm Goat Cheese and Blueberry Compote (in less than 15 minutes)

I think it is possible that, despite by best attempts at pushing the fruits and veggies, we came home with scurvy from out two week vacation. (I jest)  What is not a joke is the serious hedonistic eating that went on. (that will be another post — amazing food in Montreal)  When we went grocery shopping this morning I issued a strict edict that all items to go in our cart must be FRESH.  THis is hopefully just the first of many wonderful salads we can make with our finds.

handful of arugula (the green I hated right up until I loved it)

pint of blueberries (honey, vinegar, salt)

Simmer the blueberries in a small saucepan with a dot of butter.  When burst, puree using either a immersion or regular blender. Return to sauce pan. Add a glug of  vinegar (kind of your choice) sprinkle of salt and squeeze of honey to taste.  Set aside to cool.

Distribute spinach and arugula onto plates.  Sprinkle with walnuts.  Slice goat cheese and lay one disk on each salad.  (optional — coat with panko and fry in a bit of olive oil, turning once)  Pour blueberry sauce over each salad and serve.
